Ingredients of Anda Masala

  1. 4-5 of eggs.
  2. 2 of medium size potatoes.
  3. 1 of onion chopped.
  4. 1 of tomato (chopped).
  5. 1/2 of capsicum chopped.
  6. 1 tbsp of ginger-garlic paste.
  7. To taste of Khada garam masala.
  8. 1 of bay leaf.
  9. 1 of dried red chilli.
  10. As needed of curry leaves.
  11. 1/2 tsp of Sabut Jeera.
  12. 1 pinch of hing.
  13. As needed of Coriander leaves for garnishing.
  14. To taste of Kashmiri red chilli powder.
  15. 3-4 of Slit green chillies.
  16. 1/4 tsp of Turmeric powder.
  17. 1 tsp of Cumin-coriander powder.
  18. To taste of Salt.
  19. 1/2 tsp of sugar.
  20. As needed of Oil.
  21. 1/2 tsp of garam masala powder.

Anda Masala step by step

  1. Boil the eggs & potatoes, now cut the potatoes into halves. Now peel them & give slits to the eggs on each side as shown in the image. Now heat a pan, add some oil, now add a 1/4th tsp turmeric powder & 1/4th tsp kashmiri red chilli powder & shallow fry the eggs & potato pieces for 2 to 3 mins...
  2. Now in the same pan, add some more oil. Now add a tsp of jeera, khada garam masalas, bay leaf, dried red chilli, curry leaves a pinch of hing. Let everything splutter a bit..
  3. Now add chopped onion, chopped tomatoes, chopped capsicum, ginger-garlic paste & slit green chillies. Mix everything well. Now add coriander-cumin powder, turmeric powder, garam masala powder, kashmiri red chilli powder, salt & sugar & give it a good mix. Cook the masalas on a low flame until oil releases from the masalas. Now add eggs & potatoes into it. Mix & coat them well with the masalas.
  4. Now add half cup of water to it. Cover it and let it cook om a low flame for about 5 to 7 mins. Garnish it with some coriander leaves & serve hot with chapati or rice....
