Ingredients of Anda Masala
- 4-5 of eggs.
- 2 of medium size potatoes.
- 1 of onion chopped.
- 1 of tomato (chopped).
- 1/2 of capsicum chopped.
- 1 tbsp of ginger-garlic paste.
- To taste of Khada garam masala.
- 1 of bay leaf.
- 1 of dried red chilli.
- As needed of curry leaves.
- 1/2 tsp of Sabut Jeera.
- 1 pinch of hing.
- As needed of Coriander leaves for garnishing.
- To taste of Kashmiri red chilli powder.
- 3-4 of Slit green chillies.
- 1/4 tsp of Turmeric powder.
- 1 tsp of Cumin-coriander powder.
- To taste of Salt.
- 1/2 tsp of sugar.
- As needed of Oil.
- 1/2 tsp of garam masala powder.
Anda Masala step by step
- Boil the eggs & potatoes, now cut the potatoes into halves. Now peel them & give slits to the eggs on each side as shown in the image. Now heat a pan, add some oil, now add a 1/4th tsp turmeric powder & 1/4th tsp kashmiri red chilli powder & shallow fry the eggs & potato pieces for 2 to 3 mins...
- Now in the same pan, add some more oil. Now add a tsp of jeera, khada garam masalas, bay leaf, dried red chilli, curry leaves a pinch of hing. Let everything splutter a bit..
- Now add chopped onion, chopped tomatoes, chopped capsicum, ginger-garlic paste & slit green chillies. Mix everything well. Now add coriander-cumin powder, turmeric powder, garam masala powder, kashmiri red chilli powder, salt & sugar & give it a good mix. Cook the masalas on a low flame until oil releases from the masalas. Now add eggs & potatoes into it. Mix & coat them well with the masalas.
- Now add half cup of water to it. Cover it and let it cook om a low flame for about 5 to 7 mins. Garnish it with some coriander leaves & serve hot with chapati or rice....
