Ingredients of Momma's egg rolls

  1. 1 package of egg roll wrappers.
  2. 2 of handfulls of shredded carrots (10 if your trump).
  3. 1 head of cabbage.
  4. 1 lb of sausage.
  5. 1 of egg.
  6. 2 tablespoons of oyster sauce.
  7. 1 tablespoon of chopped garlic.
  8. 1 splash of soy sauce.
  9. 1 splash of lime.
  10. 1/2 tablespoon of grated Ginger.
  11. 1 package of shiitake mushrooms.

Momma's egg rolls step by step

  1. Brown sausage, break it up into the smallest crumbles you can.
  2. Season the sausage with garlic, ginger, oyster sauce, soy sauce, and lime..
  3. Set sausage aside to cool.
  4. Slice cabbage super fine, and put it in a mixing bowl.
  5. Add grated carrots, you can put more or less depending on preference..
  6. Slice shiitake mushrooms super thinly and add to the mixture.
  7. Add the cooled sausage and mix thoroughly..
  8. Place egg roll wrapper in front of you with a corner pointing towards you..
  9. Put a small hand full of the filling in the middle of the wrapper.
  10. Tightly wrap the bottom corner over the filling.
  11. Take each side corner and tuck them in securely.
  12. Beat the egg and paint it on the edges of the top corner of the egg roll wrap(this will help it seal).
  13. Continue to roll the wrap all the way up, keeping it as tight as possible.
  14. Heat your oil until a drop of water sizzles instantly.
  15. Put egg rolls in oil a few at a time and fry until golden brown..

I've included three cooking methods in this recipe and all of them yield a very crispy crust. These Southwest Egg Rolls are a family favorite - filled with chicken, corn, beans, spinach and tex-mex spices. Serve with Avocado Ranch Dipping Sauce. But these egg rolls, they are my Mom's recipe for Vietnamese egg rolls. I'm sure somebody will say they are not authentic.
