- 1 package of egg roll wrappers.
- 2 of handfulls of shredded carrots (10 if your trump).
- 1 head of cabbage.
- 1 lb of sausage.
- 1 of egg.
- 2 tablespoons of oyster sauce.
- 1 tablespoon of chopped garlic.
- 1 splash of soy sauce.
- 1 splash of lime.
- 1/2 tablespoon of grated Ginger.
- 1 package of shiitake mushrooms.

- Brown sausage, break it up into the smallest crumbles you can.
- Season the sausage with garlic, ginger, oyster sauce, soy sauce, and lime..
- Set sausage aside to cool.
- Slice cabbage super fine, and put it in a mixing bowl.
- Add grated carrots, you can put more or less depending on preference..
- Slice shiitake mushrooms super thinly and add to the mixture.
- Add the cooled sausage and mix thoroughly..
- Place egg roll wrapper in front of you with a corner pointing towards you..
- Put a small hand full of the filling in the middle of the wrapper.
- Tightly wrap the bottom corner over the filling.
- Take each side corner and tuck them in securely.
- Beat the egg and paint it on the edges of the top corner of the egg roll wrap(this will help it seal).
- Continue to roll the wrap all the way up, keeping it as tight as possible.
- Heat your oil until a drop of water sizzles instantly.
- Put egg rolls in oil a few at a time and fry until golden brown..
I've included three cooking methods in this recipe and all of them yield a very crispy crust. These Southwest Egg Rolls are a family favorite - filled with chicken, corn, beans, spinach and tex-mex spices. Serve with Avocado Ranch Dipping Sauce. But these egg rolls, they are my Mom's recipe for Vietnamese egg rolls. I'm sure somebody will say they are not authentic.
