Ingredients of Anda Bhurji Pav

  1. of Eggs.
  2. of Ghee or butter.
  3. of large onion finely chopped.
  4. of tomatoes; medium, finely chopped.
  5. of large, Capsicum/ green bell pepper finely chopped without the seeds.
  6. of Green chilies, finely chopped (add more as per your taste).
  7. of Green coriander, chopped.
  8. of Salt, (or as per taste).
  9. of Red chilli powder.
  10. of Milk.
  11. of Pav.
  12. of butter, to roast the pav.

Anda Bhurji Pav step by step

  1. For the bhurji Heat ghee/ butter in a kadai/wok, add the onions and cook them till they turn light golden. Add the tomatoes and green chilies. Cook for 2-3 minutes..
  2. Add the salt, red chilli and half of the green coriander. Mix. Toss in the capsicum. Cover and cook till capsicum is a little soft..
  3. In the meanwhile break the eggs in a bowl add a teas poon of milk and whisk lightly. Add the eggs to the vegetables and keep mixing till the eggs are almost done. Remove from heat add the rest of the green coriander..
  4. For the Pav Cut the pav in half horizontally, heat some butter in a pan and roast the pavs in it till they are golden..
  5. Serve the buttery pav with anda bhurji and enjoy..
