  7. Toast the bread to your liking, cut in half and ready them on a plate. Keep folding the mixture for 3-4 minutes. Add salt and pepper to taste..
  8. Once the mixture is to your liking, serve directly onto toast and enjoy!.

I make egg salad out of the leftovers for sandwiches over the next two days adding various things like onion bits, dill, mustard, hot sauce, lemon pepper, cheese slices, etc. We really can't imagine breakfast without eggs, can you?
