Today I'm sharing Indian authentic simple and spicy Anda / Egg curry. Dhaba style Anda Masala recipe is a tasty egg curry made using boiled eggs fried and then cooked in a gravy rich in spices. Anda curry step by step

  1. Firstly u need to finely chop the onions, garlic, green chillies and ginger....and u need to make an tomato puree and keep it aside...
  2. Now u need to pour 2 tablespoons of oil in a kadai and when the oil gets heated at this stage u need to add half teaspoon turmeric powder and half teaspoon red chilli powder and to this u need to add 4 boiled eggs and fry it in oil till the eggs turn to golden brown colour...after ur eggs turn to golden brown colour at this stage u need take the eggs out and keep it seperately in a plate a.
  3. Now to the same kadai u need to add some more fresh oil and add the finely chopped onions and fry the onions till it turns to golden brown colour....and now u need to add the finely chopped garlic ginger and the green chillies and fry all these till their raw smell dissappears and it becomes little translucent....
  4. Now at this stage u need to add 1/2 teaspoon turmeric powder, 1 teaspoon red chilli powder, 2 teaspoon coriander powder and 1 teaspoon dry mango powder and fry all these and to it add little water and tomato puree too and mix it up by adding salt as per ur taste and leave it for a while till the oil sepearates...after the oil gets seperated at this stage u need to add 1 teaspoon roasted Kasuri methi, 1 teaspoon pepper powder and 1 teaspoon garam masala and mix all this well....
  5. After the gravy is ready now at this stage u need to add the mashed boiled potatoes to the gravy and add little little water so that it mix well with the gravy......
  6. And now when u see that the potatoes are very well mixed with the gravy at this stage u need to add to it the fried eggs which u had kept aside and top it with 2 tablespoons of butter......
  7. After adding butter to it u need to close it with the lid for 2 minutes....now ur delicious egg curry is ready for serving 😋.
