Ingredients of Kolkata Egg Rolls

  1. 1/2 cup of maida/All-purpose flour.
  2. 2 of eggs.
  3. 2 of green chillies.
  4. 1/2 of onion thinly sliced.
  5. 2 tsp of tomato or chilli tomato ketchup.
  6. 2 tsp of green chilli sauce.
  7. 2 tsp of red chilli sauce.
  8. 1/2 of cucumber thinly cut.
  9. as needed of Oil or dalda.
  10. To taste of Salt.

Kolkata Egg Rolls step by step

  1. First add maida, a pinch of salt and Knead a soft dough, add 1 tsp of oil in it and again Knead it well. Cover it and keep it aside for about half an hour..
  2. Now add onion slices, cucumber cuts, sauces, a pinch of salt, mix them and keep it aside..
  3. Now divide the dough into 2 equal portions and roll it out into a chapati. In a frying pan cook the parathas 50 percent and keep them aside. Now take a bowl, add an egg into it, add sum salt, green chilli cuts and whisk it properly. Put the scrambled egg on the pan and the half cooked paratha over it. The egg will get stick to the paratha. Now cook the paratha completely by flipping it out untill crisp..
  4. Now remove it and place it in an alluminium foil as shown in pic 1. Put a tbsp of the mixture on one side, vertically as shown in the image. Now roll it out with the foil and tuck it inside the roll as shown in pic 2. Make the other roll in the same way and serve hot...
